Aglio e Olio is the instant meal your tired and weary soul needs right now.

Especially after a mentally exhausting day. In the days of yore, I would just order some ramen from Uber Eats and call it a night. But now I really enjoy my time in the kitchen when making home cooked meals for myself. It’s borderline therapeutic. Highly recommend.

Tonight, I made this ridiculously easy (and absolutely delicious!) dish with the homemade pasta that I keep on standby in the freezer. I paired it with some salmon doused with lime, but get creative with whatever protein you want! It took me less than 15 minutes to cook.

Ingredients (these measurements are not exact… clearly, lol)

1 single serving of homemade pasta (just eyeball it— you can obvi sub pasta from the box, too)
A huge glug of cold pressed olive oil (again, just eyeball it)
3 cloves of garlic, thinly sliced
2-3 tsp of red pepper flakes (3-4 good shakes from the container will do)
A bunch of parsley, roughly chopped
A pinch of ground black pepper
A pinch of salt to taste
Grated parmasan
Choice of protein (optional)

Instructions

  1. Boil your pasta for 4-5 minutes until al dente. You should probs boil this in super salty water, but I’ve been hovering around stage 2 hypertension these days so I am cutting down my salt intake.
  2. Bring a sauté pan to medium heat and add lots of olive oil. Don’t be shy with the fat.
  3. Add your garlic slices to the pan, taking care not to burn it. Nobody likes burnt garlic… even though that’s exactly what I did today, smh. Don’t take your eyes off the pan to chop your parsley on the side while your garlic is cooking— mise en place will always save the day!
  4. Add the red pepper flakes, pasta, salt, pepper, parsley, and parm. Give it a nice tossy toss.
  5. Serve with your favorite protein and garnish with a generous helping of parm.
